Chef Kyle Nichol has gone all-out in offering either succulent chicken ballotine with prosciutto and a tarragon gravy, OR a delicious porchetta with brown butter applesauce and roasting juices.
To finish - the Australian classic pavlova with strawberry gum cream and delicious fruits.
