Savoury, spicy and balanced
Hand sorted and stomped before undergoing wild fermentation in open fermenters, where it was hand plunged daily. Hand pressed then matured in French oak barrels (20% new). Full wild malolactic fermentation. A balanced, medium bodied, cool climate Shiraz. Smells of dark berries, spice and a savoury, oaky earthiness. Tastes of bright blueberries, aniseed, blackberry and a long clean finish.
